How to Use Barbecue Rubs

  • Use these rubs to season your brisket (or other meat you want to barbecue).
     
  • Rub the dry mixture evenly over the meat, massaging it into every pore you can find.
     
  • Place the rubbed meat in a plastic bag and refrigerate for several hours before cooking, preferably overnight.


  • Barbecue or grill using your favorite method.

Wild Bill’s Brisket Rub
 

Ingredients

Directions

Combine all ingredients in a bowl and mix thoroughly. Store unused rub in an airtight container to preserve freshness.


Hungarian Rub
 

Ingredients

Hungarian paprika

coriander, ground

lemon zest (zest from 1 lemon), finely grated

dried marjoram

garlic powder

caraway seeds, crushed

Directions

In a small bowl combine paprika, coriander, lemon zest, marjoram, garlic powder, salt, pepper, cumin, caraway seeds, and cinnamon.

Rub herb mixture on both sides of meat, pressing into surface. Store unused barbecue rub in an airtight container to preserve freshness.


Southern Barbecue Rub

Yield:  Approx. 1 cup barbecue rub seasoning
 

Ingredients
3 Tbsp garlic powder
3 Tbsp paprika
3 Tbsp sugar
2 Tbsp salt
1 Tbsp black pepper
2 tsp sage, ground
2 tsp ginger, ground
1 tsp cumin, ground
1 tsp dry mustard
1/2 to 1 tsp cayenne pepper


Directions

Combine all the ingredients and mix thoroughly. Place in an airtight container with a lid and be sure to seal it tightly, removing as much air as possible.

This will stay fresh for about a year when stored in a cool, dark place. Makes about 1 cup barbecue rub.
